Is it correct to use 'used to' in a sentence? For example: He is less interested in other people than he used to be. He gets tired more easily than he used to.

Yes, perfectly correct, & you have used it perfectly correctly.

"He used to go to Paris every weekend" = "he was accustomed to go to Paris every weekend".

The pronunciation differs from 'used' in the sense 'make use of'. 'Used' as in 'made use of' is usually pronounced YOOZED; 'used' when it means 'accustomed to' is pronounced YOOST.
