I like the second one much better. Pilita, though both are OK. You could make it a little less wordy and more clear, though:
'One of the most valuable experiences I had this semester was attending the Southern California Puente Conference at UCLA.'
(Strictly, the valuable experience wasn't the 'opportunity', was it?-- it was 'attending the conference' itself.)
