Do we always have to put "A or An" before a single thing? For example, in the sentence: "I went to the café and drank a hot coffee" - Does the "A" necessary there, or maybe also the sentence "I went to the café and drank hot coffee" is correct?

"I drank a hot coffee" means that you drank one cup of coffee.  "I drank hot coffee' means that you drank some coffee -- maybe one cup, maybe three or four cups.
