I've always found some adjectives which precede weather, for exanple: what annoying weather, what crazy weather...I've never found weather alone

And thanks for replying. As far as I know, 'weather' is uncountable, and therefore we should say: What weather! I agree with you when you say that this expression as such is relatively uncommon. You are, indeed, much more likely to hear (and use) an expression such as: What annoying weather!
