I'm playing tennis on Monday My game is already 'scheduled'. Similar to 'My plane leaves on Monday at 9pm.
I'll be playing tennis on Monday Use in a context where two events/activities occur at the same time. eg A: Can you call me on Monday at 11am?
B: No, I'll be playing tennis on Monday at 11. I'll call you at 1pm, OK?
I'm going to play tennis on Monday In simple terms, 'going to' suggests a plan.
I'm going to be playing tennis on Monday See #2 above.
