(i) i think it will definitely interest you guys.
(ii) i think it will definitely be of interest to you guys.

Both sound correct to me (just capitalize the personal pronoun 'i' and add a comma before 'guys').

I agree with the capital I, but "you guys" can be a collocation - a very colloquial one but quite common.
