Is it correct for me to write "My husband and I are concerned about our daughter", or "Me and my husband are concerned about my daughter."

The first version is correct.


A handy tool is to use only the single subject (I/me) for a test:

I am concerned about my daughter.

Me am concerned about my daughter.


"My husband and I" is the subject of the sentence, so you should use the "subjective" form of the pronoun.  


An example of the "objective" use ("me") would be:

My daughter has been giving my husband and me a hard time.

Don't give me such a hard time.


"Me and my husband" is also bad useage because it's considered polite to mention yourself last.
