Without language thought is impossible.

 A:  Without language thought would be impossible.

 B:  Without language thought is impossible. (I saw this sentence in a certain book)

 
 I think A is correct, and it expresses that we humans do have language now, but if we should have no language at all, thought would be impossible. 


 But I' m not so sure about B. Maybe B expresses generally that if we humans have language we can think, and if not we can't think.
But we humans do have language, so I think we can't state B.

Am I right?

They are both grammatically correct. Which one you opt to use really depends on the “mood” you want to express in. In general speech, I would take # 2.
