You are right - it is emphasisng "not true" - and has the meaning : That is absolutely not true. It's a colloquialism. That's not so true has the meaning : That is somewhat false/incorrect

Yes - the passage is indeed saying that provided you get your label/marketing right, you will sell anything well, from the best luxury item to the most mundane daily one. The "nosh pot" is merely a colloquialism for a cooking dish.
