There is no noun in ''It should have been much better'' - both ''much'' and ''better'' are adverbs. Perhaps, you meant that ''novelty items'' is a compound noun. There is no need to use a verb with a compound noun.

"Well" is correct. It's an adverb and correctly modifies the verb, "doing." "Great" is acceptable slang. "Good" is an adjective which needs a noun to modify: "He's having good / great luck with his recovery."

That's quite true, in spite of a few exceptions. In the first example weeks is not used adjectivally. early is not a noun. It's an adverb. So that one is OK.The other two should be changed to singular: salary expenses and two hundred dollars.CJ
