'Northern' is an adjective.
'North' is a noun, eg Eskimos live in the North. It is also an adjective, eg a north wind.
Names tend to be somwhat idiomatic. eg We say eg Northern Ireland but North Korea.

You are right in the first part, but only some nationality words work that way. It would be better to have a complete sentence to work with, so:
The Spanish, English, Chinese and Koreans are all lovely people.
