I would say that 'more than one' requires a singular noun so the third sentence is incorrect (in my view).
In the first sentence 'more than one subject' is the subject of the sentence (in singular) so it should be correct.

THe correct sentence is: "Don and I have some actions heres"
In this sentence, "have" is used instead "has" because "and" forces to use the plural form. Besides, you should use "actions" instead

Hi Plural forms in English are nearly always written without an apostrophe. However, if you meant a possesive form, you do have to use one. But this is not entirely clear from what you've written. So, almost never an apostrophe with plurals.
