Not only is "I love you" one of the most used sentences in English (and in all other languages for that matter!), it's also the most abused.

It depends on where you place it. If it's part of the subject, then you may capitalize it. If it's in the body of the letter, then it's better to use a lowercase "d". "Good day" is written just like "good morning, good afternoon, and good evening".
