Could you please give the sentence that has the verb "age into".
The verb "age" means to grow older. Here are some examples:

She ages gracefully.
As wine ages, it gets more flavorful and also more expensive.

It is more of a figure of speech, because we apply the verb "age" especially to wine. Vintners "age" wine in oak barrels so that it acquires some of the complex flavors of the wood and develops a characteristic richness of taste. Aged wine is a delight, and commands very high prices.

The writer is comparing Virginia and its wine-growing industry to wine itself - getting better and better as it develops into full maturity.
