However, we are celebrating it today, a day that should not be any less significant and meaningful.

A day of recognition and celebration as a tribute to and an appreciation of the nurse. The main problem with this sentence is that it needs a verb.

Or you could write it as

However, we are celebrating it today, a day that should not be any less significant and meaningful, a day of recognition and celebration as a tribute to and an appreciation of the nurse. (I'd say 'of nurses')

I can assume the intended meaning of "however" is "one the other hand." There are other meanings possible. The second clause in that sentence does not continue the context established by the first. Then follows a sentence fragment that is actually an adjecive phrase. It is difficult to extract the meaning from what has been written; therefore, hard to correct.
"Today is a day of celebration and recognition of nurses," might work.
