it's merely stating that one should never be defined by their appearance, as man has more depth and can be defined in many other ways.
It is about being the same as everyone else "If I could reach from pole to pole, Or grasp the ocean with a span," = if i was the same as you, or better then "I would be measured by the soul"= i would be measured by who i really am "The mind's the standard of the man."
as its who i really am that matters, the things i do and think, not how i look.
