Having been drunk, he didn't know what he was doing. This sounds to me like he first was drunk, and then on a later occasion he didn't know what he was doing.

I'd say

eg Being drunk, he didn't know what he was doing.

eg Drunk, he didn't know what he was doing.

eg Because he was drunk, he didn't know what he ws doing.
