How to make these sentences non-finite?

1. He didn't accept the offer he had been given.
2. When you are in Greece do as the Greeks do.
3. John remembered the time when he was younger.

There is no such thing as a non-finite sentence, so if you change those so they have non-finite verb forms, you won't have sentences anymore. Are you sure you understood the instructions you were given about these sentences?

The non-finite forms are infinitives and -ing forms. There is probably more than one way to do each of these.

Not having accepted the offer he had been given, ... (You need to add a main clause to make a sentence.)
When traveling in Greece, do as the Greeks do. (This one has a main clause. You don't need to add anything.)
(John was able) to remember the time when he was younger. / John remembered being younger.

It is just barely possible, but almost no one would use that because we have the word 'remembrance' for that context:

John's remembrance of being younger

3. John remembered the time being young.

Are these two ok? I don't know how to do the first one.

2. Being in Greece, do as the Greeks do. (Same as you had.)
3. (Yours is OK, but I think they should have underlined "the time" as well so you could write:
John remembered being young.
That's all you really need.)
