I have a doubt with the sentence "I left my windows open/opened"
I think the correct one is the one with "open" but I'm not sure if the second one is also possible.

They both seem fine to me. 'Open' is much more common, of course. 'Opened' stresses more that the act of opening has been performed.

Clive's right, the second one suggests more.
