"I work as an accountant." I'm an accountant.

"How's that?" How do you like that?

"It's fine/all right/okay."

"Really, you like it?"

"Yes. Is that so hard to believe?"

I've even heard people say "How's that?" when they didn't hear what was said, so it can be like "Sorry. What did you say?"

Does "How's that?" not work because it could be understood to mean something else? Would it have been better to ask "How's that like?" or "What's that like?"?

Would it have been better to ask "How's that like?" This is not good grammar

or "What's that like?"? This sounds like you are asking for a description of the work rather than whether I like the work or not.
