which is also correct, but 'were' often substitutes for 'had been'.

I don't love it. "If I were you" normally begins a sentence that goes on to say something concrete you should do. It is not really literal. Your sentence sounds like the person made the thing boring on purpose. In my dialect, it would be simply "I wouldn’t have done such a boring job."
