Following on from this, it should, therefore, come as no surprise to you that the
plant-based diet is certainly not restrictive. Admittedly, however, I thought the opposite
of this when I first started out on the diet. This is because, looking back, I was too
restrictive in my options. I only chose foods which were common and which I was used
to eating, such as tofu. Sure, tofu is great and who doesn’t love it, right? However, tofu is
just one of an almost infinite amount of choices available to you at grocery stores, online,
and of those foods you can grow yourself. I soon found that, over time, tofu was replaced
with homemade vegan cheese, blended nuts, and spices. In other words, I started to
experiment and mix different ingredients to discover tasty recipes that I would always look
forward to eating. It’s those recipes which I have included in this book for everyone to
enjoy, as I most certainly did!
