"Many driving accidents occur due to undesirable mental workload, or at least are related to it."

Can I replace "related" by "associated" or any other word?

You can say 'associated with it'.

If you can have an undesirable workload, what would be an example of a desirable workload?

I think performing mental calculation, for instance, can be an example of desirable workload.
