You know whether your dog is male or female, so use 'his' or 'hers'.

You are right to suspect that you don't end a sentence with its.

If you don't know the gender of an animal you own, say

I have had my breakfast, Mary has had hers, and so has our pet mouse/gecko/tarantula.
