I'd write it this way.
Though my grandfather is very old, over 80 years of age, his eyes are still quick and expressive, and his mind is still very intelligent.

If you feel you must use dashes, write it thus.
Though my grandfather is very old - over 80 years of age - his eyes are still quick and expressive, and his mind is still very intelligent.
or
Though my grandfather is very old (over 80 years of age), his eyes are still quick and expressive, and his mind is still very intelligent.

This all sounds OK as written. You might use another term instead of 'intelligent', since minds are by nature supposed to be at least a bit intelligent. eg His mind is still very sharp / acute'.
