Not quite correct. I would say: What did you learn during the course in basic English [that/which] you completed last month?

Did you teacher want this from you? It will not be proper to use participle with "last week" at the end of the sentence which is strictly a sign of past tense.

Your suggestion is correct English but I think it would make more sense to ask what the person had learnt while taking the course, not after it. Cf.:
What did you do after reading the newspaper?
= The person first read the newspaper and then did something, and I want to know what he did.

What did you learn after completing a Basic English course last month?
= The person first completed a Basic English course and then learnt something, and I want to know what he learnt.
