That depends on how well you know them.

In general, ghosts, monkeys, and chimpanzees are 'it', but if you know the identity of the ghost, it could be 'he' or 'she', and if the monkey or chimpanzee is more like a pet, it too can be 'he' or 'she'. Most pets are 'he' or 'she'.

Well, I suddenly think of a question. When you refer to someone (i.e. Human) you don't know his/her sex, should I use he or she or something otherwise?

Often you can use 'they'.

Someone ran by just a moment ago. I don't know who they were.
Does everybody have their pencils and paper ready for the exam?
Somebody stole the wallet, but no one saw them steal it.

I would use the word things instead because it's more general.

For the part of your question about animals, using the word objects would not make sense. You could say non-human animals, animals other than humans or simply animals.
