How would you correctly write these sentences please?

1 Don't fill the ice tray to the brim but not as low as you fill them either. In between is good.
2 We don't get as many europeans as Americans here.

I heard this on TV, Does this mean "It's not so much a fight that we have as a disagreement." I don't know if the bold is natural though?

3 I don't think they fight so much as have a disagreement.
