In both sentences, you can leave out the 'the'.

In sentence 2 , 'players of over 30 years' could mean 'players of over 30 years' experience', so isn't quite what you want.

You could compress it a little:

'In cricket and football, young players react faster than players over 30.'

Some people would prefer 'more quickly' to 'faster'.
