When you say 'that week', it's lime saying 'that chair'. It means the week or the chair previously indicated/identified. eg

A: I will be in Wimbledon to watch the tennis next year, in the second week of June.

B: How many seats will you need for the match that week?

"That" in "that week" works like all the other times you use "that." It's whatever week you're talking about. You could be talking about the week of January 6 or the week of May 23... or any week at all. You need the context to know which week.
