In such sentences, how can i know which word to use ?

eg All the stores (that/which/who) are in the street are closed this afternoon.
He's the one (who/that/which) cares about us

Use 'that' because 'stores' are not people.
You can use 'which' if you want something more formal.

You can omit 'that are' / 'which are': All the stores in the street ....
That's also possible for other forms of be (is, was, were).

Note the same pattern of subject with a prepositional phrase in the examples below. (Optional elements in parentheses.)

The courses (that are) for athletes will start in June.
A species (which is) with us year round is the blue heron.
All the art (that was) on display at the new museum was from Japan.

Tara2He's the one (who/that/which) cares about us.

Use 'who' because 'he' is a person.
