I don't know what you mean by "structured language."

Maybe you are saying something like this: In school we are taught formal English with lots of rules. Do we have to understand all the grammar rules to speak to people casually?

In using language, the fundamental test is whether it communicates. If you can communicate with nothing but nouns and gestures, then that is enough.

But can you communicate accurately? Can you say what you want to say and does the other person understand it exactly? Or will you receive two Vegetarian Lunches when you only ordered one? That is why you need the structured language. The structured language is the one accepted and understood (we hope!) by all English speakers.
