"Thought" is singular and "thoughts" are plural. "That's my thought" is fine.

But "That's my thoughts" ("That is my thoughts") isn't a grammatical sentence. You could say "These are my thoughts," "Those are my thoughts," or "Here are my thoughts."
"That's my thought" is correct, but not commonly used. We would usually say, "That's what I think," or "That's my opinion."

As stated by others, "thought" is singular, and "thoughts" is plural, so you just need to use the appropriate pronoun with it.
"That's my thought" is a sentence which is used to show our opinion or our sight with something

"That's my thoughts" have two meanings:
