The closest I can think of is something like "two one dollar bills", "two dollars", "two hundred dollars", "two fifty dollar bills", "two dimes", "two twenty five cent pieces", etc.

If you absolutely must say "two ? of money" then nearest likely possibility I can think of is "two pieces of money." Be aware however that in the vast majority of cases you will get some very odd looks if you use such a formulation.

In the UK, we would use 'notes', short for bank notes.
